
Soft tender meat kebabs – Simply yumm !!
Mutton Boti Kebab is very yummy and lip smacking starter. It can be served at tea time, dinner or lunch. The spices spread the aroma and give a nice and wonderful taste to your taste buds. Its takes little effort and time to cook. But the result is so wonderful and yummy.
Recipe – Mutton Boti Kebab
Serves: 8
15 minutes for preparation, 2 hour for marination, 60 minutes for cooking
Ingredients:
- 1 kg mutton cubes
- 1 1/2 tbsp ginger paste
- 1 1/2 tbsp garlic paste
- 3 tbsp raw papaya paste
- 1 tsp royal cumin seeds
- 1 tsp black pepper powder
- 1 tbsp kachri powder
- 1 tsp pathar ke phool powder
- 1 tbsp kabab chini powder
- 1 tbsp rose petal powder
- 1 tsp red chilli powder
- 3 tbs hung curd
- 1 1/2 tsp garam masala
- 1/2 tsp green cardamom powder
- 1 tsp coriander powder
- 2 tsp poppy seed paste
- 1 tbsp coriander leaves
- 1tbsp mint leaves
- 1 tsp green chillies
- Desi ghee
- Salt to taste
Method:
- Wash and drain water from the mutton.
- Make a paste of papaya.
- Make a powder of all the spices to a fine powder and keep aside.
- Marinate the mutton pieces with papaya, ginger garlic paste, coriander powder, garam masala, red chili paste, chili powder, salt, curd and the prepared spices powder and mix all that in a bowl and wrap and cover it and keep it in refrigerator for about 2 hours.
- Now take out the mutton boti from the refrigerator and cook on low medium heat for about 30 minutes and dry the water from the mutton pieces.
- Put all the cooked mutton cubes on skewers and start grilling on charcoal or on grill.
- Apply ghee (clarified butter) over the cubes and grill till brown and golden in color and skew some selected vegetable cubes along with mutton boti kebab and serve hot with your favorite chutney and chopped onions.
